Looking for a easy and delicious Mince Pie recipe? Look no further, the Tea Rooms have created this simple recipe using Tiptree Mincemeat.

Ingredients 

  • 2 Sheets of sweetened shortcrust pastry (warmed to room temperature at least 30 minutes before)
  • 1 Jar of Tiptree Mincemeat
  • Demerara Sugar for decorate
  • Milk to wash tops

Method

  1. Preheat oven to 180C/350F.

  2. Grease and lightly flour a 12 hole cupcake baking tray.

  3. Roll out pastry to 4-5mm thick. Cut out 12 circles using a 8 ½ cm round or fluted cutter.

  4. Gently press pastry circles into cupcake tin. Add 1tsp of Tiptree Mincemeat to each Mince Pie.

  5. Re-roll remaining pastry to 4-5mm thick. Cut out 12 stars using a 6cm star cutter and place on top of mince pies.

  6. Lightly brush the top of each Mince Pie with a little milk and sprinkle on a pinch of demerara sugar to finish.

  7. Bake in oven for 10-15 mins, or until pastry is lightly golden and mincemeat begins to bubble.

  8. Remove from tin with a sharp knife and place on a wire rack to cool. Dust with icing sugar before serving.
